CAULIFLOWER 
Cauliflower-looking but not as tight, this wild mushroom's texture is crunchy to the bite. It grows in the lower mountain areas from autumn to winter. It can grow to 12 inches in diameter.
CHANTERELLE
Chanterelle is one of the most popular wild mushrooms in spring, autumn and winter. It has such a flavor that anyone would remember to come back for it the next time around. Chanterelle and porcini are the most consumed wild mushrooms in the U.S. market. Chanterelle has a golden color from top to bottom.
CANARY
A very pretty mushroom, yellow oyster is usually used as garnish or decorations on food plates. Not only that, it is also a very tasty mushroom good for all lightly cooked dishes. Canary is now cultivated in Mushroom Farms available year around.
CANDY CAP
A mushroom with a thin reddish cap about 1inch to 2 inches across, thin stem. There are both wild and cultivated candy cap mushrooms. The wild can be found in specific warm low altitude mountain areas from Spring to Fall, while the cultivated is available throughout the year. The caps of this mushroom tend to become a little sticky. It is rarely consumed “uncooked”.
