CRIMINI (baby-bello)

A brown-ish button mushroom 1 inch to 2 inches across on top, the smaller type of portabello family, but with closed caps. Most of it is cultivated and grown indoors in the controlled environment, available all year round. Its tender texture and enhanced flavor applies well in meat dishes and salads. It is also available in dehydrated sliced form.

CHARBONNIER

It is a tender mushroom with greenish tints on the caps. It is umbrella-shaped, with cap sizes ranging from 2 to 3 inches A weak mushroom, charbonnier is very sensitive to temperature changes, not easy to keep over time. It is now being tried in farm houses with limited success.

CHICKEN OF THE WOOD

It is a very dense mushroom, fanning out in layers from a tree log. Average flower of this mushroom is about 4 to 10 layers, 6 inches stretch per fan, and each layer about half inch thickness. This wild yellowish orange color mushroom grows in autumn from tree logs, available only in certain markets during its picking season.
