HEDGEHOG
It is a golden mushroom with an average cap size of 
2 to 3 inches. Its distinguished spiked gills give its name as hedgehog mushroom. It is wild, with a relative long season from late autumn to late spring. It is rich in flavor and tender in texture, and relatively moderate in price. A great choice for chefs.
