WOODEAR

As its name, this black fungus looks like ears from the wood, with curvy shapes and even thickness. The texture is chewy and crisp, holding well in cooking white remaining tender all the time. Hard to believe, yet true. It is usually cultivated in abundance. Price is very reasonable.

 

WHITE BUTTON

consumed at least twice as much as the second most popular mushroom, the white button mushroom is the most desired mushroom in the world, available all the time throughout the year. Its cap size varies from less than an inch to 4” across. It is usually picked with closed caps. The dense texture and easy taste of the white buttons makes it easy to mix in with any kind of dishes.
